A no-frills food cart parked outside Vail Brewing Company’s Eagle-Vail tasting room that dishes outstanding street tacos with inspired twists. Must-try: the vegetarian Hippie Crack (potatoes grilled with onion and poblano, Anaheim, and red bell peppers and topped with a spicy crema “crack sauce”). And the White Chick: grilled chicken in a creamy Alfredo sauce with poblano and Anaheim peppers, topped with pico de gallo and avocado sauce. Goes down well with a pint or two of Pete’s stash.
