Golf-Theme Cuisine Added to Eagle's Restaurant Row

You might assume that the owners of Beyond Golf, the new golf-simulation restaurant and bar in Eagle, would be obsessed with the game. Not exactly. Father-and-son duo Tom and Josh Galvin place themselves firmly in the “golf enthusiasts” category. And it took a long while for Josh to wade into, much less embrace, the sport. “I introduced him to golf at an early age and he didn’t care for it at first,” Tom says. “But he came to me years later and said, ‘I’d like to play again.’ I told him OK but he had to buy his own clubs.” Now the two play often and love the game enough to share a virtual version of it with the masses—paired with food and drink.
Josh opened the first Beyond Golf in Omaha, Nebraska, in 2009. At the time, golf simulators were just beginning to find a market and Beyond Golf became the place to grab a beer and swing clubs year round. Since then, the Galvins have added a full menu and upgraded the simulators twice to meet demand.
Tom, who lives most of the year in Dallas and bought a second home in Eagle in 2016, has completely fallen for the Colorado lifestyle. “I had skied at Vail and Beaver Creek, but I had never been to Eagle until a friend invited me to play golf,” he says. “The weather floored me; it was 75 degrees and sunny, and I said, “What am I doing in Dallas?” Now Tom spends most of the summer in Eagle and winters in Texas.
When 7 Hermits closed its brewpub in 2022, Tom thought the location on Capitol Street would be ideal for a Colorado iteration of Beyond Golf, but he didn’t jump on it. So when El Segundo closed two years after taking over the space, it felt like an omen. Tom signed a lease, and the duo started the remodel. “I am trying to make it look as much like the original as possible,” Tom says. “The colors are the same, the stained concrete is the same, and we’re using the same menu of smoked meats as much as possible.”
When diners hear “smoked meats,” they immediately think of barbecue, but that’s not Beyond Golf’s schtick. Instead, the house-smoked brisket, pulled pork, and chicken on the menu anchor multiple dishes spanning a variety of cuisines, from tacos and French dip and Cuban sandwiches to smoked chicken wings, salads, and a full array of appetizers.
When the Eagle location—Beyond Golf’s second outpost—opened in April, it did so without its main attraction: four Golfzon simulators. The machines (Golf Digest’s top-rated, pictured above), which allow people to “play” some of the world’s most famous courses with a floor that shifts to mimic grade, won’t arrive until mid-September for a simple reason. “It’s like the bowling alley concept,” explains Tom, who anticipates adding two additional simulators if demand warrants. “They won’t get used much in the summer because everyone wants to be outside.” For now, Beyond Golf will focus on creating a space for the community to come together for good food and drink. Tom expects the large patio to be a draw, especially when they bring in live music.
Once the simulators are installed, Beyond Golf will work on setting up leagues with foursomes on each machine. “It’s just like a bowling league,” Tom says, “where you schedule them to play back to back. It’s been very successful in Omaha.”
